Description
Sensai of our brewery was brewed from its establishment in 1716 until the end of the Edo period. It was brewed with the concept of Re and Naissance ( brith ), recalling the sakae brewing of the Edo period. The natural sake is brewed in a wooden vat using Nojoho rice cultivated with pesticides, milled at a low rice polishing ration and brewed without yeast or lactic acid. The result is a sweet aroma of rice and a harmony of five tastes ( sweetm sourm spicy, bitter and astringent ).
