Description
Our Sensai was brewed from the first year of the Kyoho Era (1716) until the end of the Edo period. The brewery brewed this sake with the concept of Re-birth, recalling the brewing of sake in the Edo period. This natural sake is made from pesticide-free Yamada-Nishiki rice, milled at a low rice polishing ratio, and brewed in wooden vats with no added yeast or lactic acid. The refreshing acidity and clear sweetness spreads and finishes sharply.
